In total eight Autumn/Winter trends are earmarked with innovative profit-making product suggestions included to help UK sites take full advantage. Highlights include the rise of Cold Brew Coffee, Craft Cider, Mexican Food, Monster Milkshakes and more.

Here, marketing director for Utopia, Kathryn Oldershaw, takes a look at two key findings, offering a glimpse of what’s to come.

Hollywood cocktails
“The timeless glamour of Hollywood is permeating a UK cocktail market already enjoying large-scale growth, while adding a more grown up, premium feel in contrast to the wilder side of Tiki mugs and sharer fishbowls. Free of garnishes and gimmicks, with a focus on stronger flavours, we have seen the market gravitating towards vintage, Hollywood-styles with bars such as Mr Fogg’s in Mayfair, Nightjar in Shoreditch and Hockley Arts Club in Nottingham, pushing the boundaries and creating more innovate serves to entice adventurous drinkers, thirsty for difference.

“Harnessing nostalgia on cocktail menus is a sure fire way to keep people coming back for more but it stands to reason that if you go to the trouble of recreating authentic serves like Negroni, Gin Martini, Old Fashioned or French 75, the glassware and barware should complement this and help tell the story of the drinks.

“Pieces such as Utopia’s new distinct Timeless Vintage range – beautiful, vintage-style options, including Flute, Goblet and Old Fashioned shapes alongside the highly versatile Hiball glass – offer exactly the right foil for these types of drinks. The all-important tools of the mixology trade such as shakers, strainers, 30s-inspired dash bottles, corkscrews, muddlers, spoons and beautiful seltzer syphons are also taken care of, helping to contribute to the final remarkable serve.”

Eat, drink, clean
“From the spiralling popularity of The Body Coach to spirallizing pioneers, Hemsley + Hemsley, clean eating and drinking has, with a little help from Instagram, become less a diet and more a lifestyle choice. There are currently almost 300 million food photos on Instagram, with the hashtags #food (25) #foodporn (56) coming just ahead of #healthy (71) and #gym (84) in the top global 100 most used*.

“Allied to this, key ingredients like eggs, avocado, sourdough, chai and quinoa; on-trend fitness foods like smoothies, shakes and salad bowls; gluten-free, dairy-free and vegan eating and growing occasions like brunch, are helping to create a culture of clean foodies.

“The right tableware can help bring clean, vibrant ingredients to life on the plate while rustic and individualistic pieces will encourage the all-important social share.

“Each of Utopia’s Isumi plates and bowls is unique in its finish with highly distinctive individual finishes, distinctive colourways and textures, while each rustic natural Olive Wood Bowl varies in size and shape. Highly versatile and suitable for all outlets, both make perfect additions to the brunch menu.

“With clean eating comes clean lines and Nude Finesse glassware, exclusively supplied by Utopia celebrates this by twinning contemporary design with purity in shape. The Finesse collection of glassware delivers a series that works perfectly across the range. The base is softly curved, contrasting the sides of the glass which are poker straight.”
